Do you guys ever feel totally tricked on Pinterest? Headlines like “5 easy DIY projects with String Lights!” and “Quick and Simple Wake-Up Workouts” are rarely ever easy, quick or simple. I especially feel cheated when I see recipes advertised as healthy and easy, only to find out the ingredients list includes trendy nonsense like persimmon, blood from a mature bison and the skin of a pineapple from a deserted island. Oh, and the “easy” part means you can blend some ingredients in your magic bullet but you’ll be whisking the others ’til your hands bleed.
If you haven’t figured this out yet, I can be a tad dramatic sometimes. You’ll learn to love it ; )
Ok but WAIT. Sometimes, you find the holy grail. Sometimes you find the 3-Step Coffee Table Upgrade that really IS only 3 steps. And sometimes you find the 5 Ingredient Breakfast Blender Muffin recipe that really only calls for 5 INGREDIENTS that you ACTUALLY OWN.
These are those muffins.
1/4 teaspoon baking soda
1/2 cup peanut or almond butter
1/2 teaspoon vanilla
Preheat oven to 400 degrees and grease muffin tin (I used mini, obviously) with cooking spray or coconut oil. Blend ingredients until well-mixed, pour into muffin tin and add whichever toppings you desire! Bake for 8-11 minutes (Mine were exactly right and golden brown at 10) and let cool before removing.
