I’ve seen lots of blog posts about coffee dates – “here’s what we would talk about if we were having coffee” – and I love them. (Looking at you Chelsea!) So I copied the idea and voila – Virtual Happy Hour! Here’s what I’d be telling you if we were sitting on a patio sipping a Mixed Berry Mule… or two.
I’d tell you how excited I am to spend a spring weekend in the mountains. We normally only go up to ski and I can’t wait to enjoy the warmer weather. I’d ask you if you love your job – does it seem like most people don’t, or is that just me? I’d cheers you over the fact that I’ve been blogging for over 2 years now and I enjoy it just as much as when I started. Sometimes it feels stressful, but then I take a step back and realize it doesn’t HAVE to be. Blogging breaks are not only occasionally desired, but sometimes necessary to keep you from feeling totally maxed out. What else would we talk about?
There’s hardly a drink I love more than a classic Moscow Mule, and I was drinking them WAY before they were “cool” ; ) – probably the only time I’ve ever been ahead of a trend, ever. Every once in awhile I’ll try a variation at a restaurant and think to myself “I could recreate that!” Annnnnd then I never do. Until now!
Behold, the crazy easy Mixed Berry Mule. I highly suggest investing in the copper mug as it definitely keeps your drink as cold as it’s intended to be. And here’s an important PSA: Trader Joe’s makes a delicious ginger beer!
2oz berry vodka (I used Veil)
4 oz ginger beer (non-alcoholic)
1/2 oz lime juice
Fill mug entirely with ice, combine all ingredients, top with fresh berry garnish; enjoy!
