2 medium/large zucchini
1 package of brussels sprouts
Step Two: Come home and create 3 easy lunches in about 30 minutes. Celebrate by wearing your new tank top and drinking wine!

Chicken Meatballs & Zoodles
Heat 4 meatballs for 2 minutes in the microwave. Spiralize 1 zucchini, drain on a paper towel and saute until softened. Add zoodles and meatballs to a container with your pasta sauce of choice!
Chicken Meatball Stir Fry
Heat 4 meatballs (do you see the pattern) for 2 minutes. Steam brussels sprouts in the package according to directions. Meanwhile, slice your remaining zucchini. Add half the sprouts, half the zucchini, a drizzle each of olive oil, soy sauce and sesame oil to a medium frying pan. Saute until zucchini is cooked. Place all ingredients into a container!
Buffalo Chicken Meatballs & Brussels
Heat the 4 meatballs (this is a serving size btw, not just a random number I picked) in your choice of hot sauce or buffalo sauce. Add to a container with the other half of your steamed brussels sprouts. Done!
